Our close-knit group of friends enjoy regular get-togethers… of course now it’s within socially distancing guidelines. We gather outside, and fortunately, we all have large outdoor spaces where we can remain close enough to converse, but still 6 feet away. So for a recent gathering, I wanted to make a quick, easy spread to enjoy on some home made sourdough crackers. I had half a jar of sun dried tomatoes in the fridge that I really needed to use, so looking at a few recipes online, I combined elements of a few, and added a few twists, like my favorite goat cheese, to come up with this recipe that everyone loved. This is adapted from Ina Garten’s sun-dried tomato dip recipe.

Sun-dried Tomato Spread with Goat Cheese and Basil

This is a super easy, yet very flavorful spread to throw together for casual gatherings.Delicious on crackers or veggies!


Ingredients

  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 1/3 cup sour cream
  • 8 ounces cream cheese, at room temperature
  • 4 ounces goat cheese
  • 1/4 cup mayonnaise
  • 1/4 tsp Tobasco sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried onion
  • 2 Tablespoons chopped fresh basil

Instructions

Puree all ingredients except basil in a food processor fitted with a metal blade. Stir in basil. Serve at room temperature with crackers, baguettes, or crudites.
