With everyone running out in the morning to make an early meeting, catch a ferry, or beat the traffic, it’s advisable to have a great tasting, portable, protein-rich breakfast food at the ready. Yeah, this bar can basically go from breakfast to dessert and be completely welcome any time of day.

Vegan Oatmeal Peanut Butter Chocolate Chip Breakfast Bars (gluten free, vegan)

Love, love, love these oatmeal breakfast bars! They’re so easy to make, and really so wholesome and healthful, that there’s no excuse not to have them ready for family every day.


Ingredients

  • 1/4 cup oat flour
  • 34 cup rolled oats
  • 1/3 cup unsweetened coconut flakes
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons ground flaxmeal
  • 6 tablespoons water
  • 2 tablespoons melted coconut oil
  • 1/3 cup peanut butter
  • 2 tablespoons peanut butter powder
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup bittersweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees/. Line a 9=inch square baking pan with parchment paper.
  2. In a small bowl, combine the flax meal and water to make “flax eggs” and stir well. Let sit for about 15 minutes.
  3. In large bowl, whisk together dry ingredients, oat flour, oats, coconut, cinnamon, baking powder, baking soada and salt.
  4. In a medium bowl, whisk together the wet ingredients:  melted coconut oil, peanut butter, maple syrup, vanilla.
  5. Pour wet mixture over the dry ingredients and mix until well combined.
  6. Add in nuts and/or chocolate chips according to preference.
  7. Scoop dough into prepared baking pan. Using a spatula, spread dough into an even layer.
  8. Bake for 20 to 30 minutes or until top is golden brown and a toothpick inserted comes out without much crumb.
  9. Place an a rack to cook. Slice into bars, and enjoy!
