I’ve never been a huge watermelon fan, that is at least, not a fan of chunks of watermelon eaten out of hand, but since I discovered watermelon salads I’ve realized what I’ve been missing! Watermelon chunks combined with herbs and another crunchy vegetable like cucumbers makes such a refreshing side dish. This is one of my favorite summer salads for a number of reasons: It can be assembled in advance, and because it has no greens it won’t get soggy at your potlucks. Also, the cool, crispy crunch of the fruit is just the perfect antidote to a hot summer day. It may seem like an odd combination, but trust me, it’s worth a try!

Description
Delicious and refreshing combination of watermelon and cucumbers is a perfect side dish for any summer barbeque.
Ingredients
- 3 cups of watermelon cut into 1-2-inch squares (about half of a small seedless watermelon)
- 1-2 cups cucumber chunks
- 2-3 Tablespoons fresh mint, thinly sliced
- 1 Tablespoon lime juice
- 3 Tablespoons olive oil
- Salt & Freshly ground pepper to taste
- 1/2 cup crumbled feta cheese
Instructions
- Combine watermelon, cucumbers and mint in a medium bowl.
- Whisk lime juice, olive oil, salt and pepper in a small bowl.
- Add lime juice and olive oil mixture to watermelon and cucumber. Then fold in feta. Refrigerate until ready to serve. Can be assembled up to 12 hours in advance.
