Thai Inspired Baked Chicken Thighs

If you love Thai food, but don’t have the patience for all the prep that goes into it, this recipe may just be the ticket. It’s a simple, yet delicious chicken recipe that will satisfy that craving without too much work.


Ingredients

  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 1 small onion, sliced
  • 1.5 pounds boneless chicken thighs
  • 4 cloves garlic, minced
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons fish sauce
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons lime juice (from one lime)
  • *2 teaspoons Sriracha (optional, use more or less depending on the level of “heat” you enjoy)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup peanuts, roughly chopped
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 400 degrees
  2. Saute onions in an oven safe pan until slightly browned.
  3. Meanwhile, in a medium bowl, combine the sweet chili sauce, soy sauce, fish sauce, ginger, lime juice and Sriracha.
  4. When onions are softened and slightly browned, push them to the side of the pan, increase the heat. Season the chicken with a bit of salt and pepper, then add it to the hot pan. Allow it to brown on one side, then turn it and brown on the other, for about 4 to 5 minutes. Then add the garlic to the edge of the pan and allow it to cook a bit.
  5. Then add the sauce, and mix until the chicken is well coated with the sauce.
  6. Place the pan in the oven and bake for about 25 minutes, or until chicken is completely cooked through.
  7. Sprinkle chicken with about half of the cilantro and peanuts.
  8. Serve over rice, with lime wedges and remaining cilantro and peanuts on the side.
