Description
If you love Thai food, but don’t have the patience for all the prep that goes into it, this recipe may just be the ticket. It’s a simple, yet delicious chicken recipe that will satisfy that craving without too much work.
Ingredients
- 1 Tablespoon olive oil
- 1 Tablespoon butter
- 1 small onion, sliced
- 1.5 pounds boneless chicken thighs
- 4 cloves garlic, minced
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 2 teaspoons fish sauce
- 1 tablespoon grated fresh ginger
- 2 tablespoons lime juice (from one lime)
- *2 teaspoons Sriracha (optional, use more or less depending on the level of “heat” you enjoy)
- 1/2 cup chopped fresh cilantro
- 1/4 cup peanuts, roughly chopped
- Lime wedges (for serving)
Instructions
- Preheat oven to 400 degrees
- Saute onions in an oven safe pan until slightly browned.
- Meanwhile, in a medium bowl, combine the sweet chili sauce, soy sauce, fish sauce, ginger, lime juice and Sriracha.
- When onions are softened and slightly browned, push them to the side of the pan, increase the heat. Season the chicken with a bit of salt and pepper, then add it to the hot pan. Allow it to brown on one side, then turn it and brown on the other, for about 4 to 5 minutes. Then add the garlic to the edge of the pan and allow it to cook a bit.
- Then add the sauce, and mix until the chicken is well coated with the sauce.
- Place the pan in the oven and bake for about 25 minutes, or until chicken is completely cooked through.
- Sprinkle chicken with about half of the cilantro and peanuts.
- Serve over rice, with lime wedges and remaining cilantro and peanuts on the side.
