Burger and Sandwich Buns

Ingredients

  • 1 1/4 cup almond flour (5 ounces)
  • 5 tbsp psyllium husk powder (45 g) Use powder, not whole husks
  • tsp baking powder
  • 1 tsp salt
  • tbsp nutritional yeast (optional) adds flavor and nutrition
  • 2 tbsp apple cider vinegar
  • 3 large egg whites
  • 7/8 cup (7 ounces) boiling water

Instructions

  1. Preheat oven to 350 degrees F (176C).
  2. In medium sized bowl, combine almond flour, psyllium powder, baking powder, salt and nutritional yeast. Use a hand-held mixer or large wire whisk and mix until well combined. Almond flour can be clumpy, so you want to make sure the clumps are broken down and well mixed.
  3. In a small bowl, mix egg whites and vinegar, either with a hand mixer or whisk, until slightly foamy.
  4. Add egg white and vinegar mixture to dry ingredients and mix with hand mixture or large spoon until dough is combined and thickened.
  5. Add boiling water to the mixture and mix until well combined and dough seems to be coming together.
  6. Transfer dough to a cutting board or parchment paper and form into a log. Use a sharp knife to separate into 5 or 6 sections. Form each section into a disk about one inch thick, and place on parchment-lined cookie/baking sheet.
  7. Bake for 40-50 minutes.
  8. Let cool for at least 15 minutes, then slice each bun horizontally to form hamburger buns.
